Rojo Mexican Grill & Tequila Bar is a refreshing, up-scale Mexican grill concept developed by Michael McDermott and Jason Merritt. The overall tone of the restaurant will be a clean, modern and hip twist on the traditional theme-based Mexican restaurant. The menu offers traditional favorites but also focuses on creative, “Nuevo” Mexican interpretations. With a footprint of 5,500 to 6,000 square feet, the dining room and bar will feature Mexican masonry with red upholstery and warm, wood-toned décor. Traditional table service will be augmented by elements of display preparation of fresh guacamole and hand-made tortillas. The bar will feature more than 50 brands of tequila housed in glass tower, in addition to full traditional liquor, wine and beer menu. Lunch and dinner will be offered daily and, with cooperation of the weather, outside patio dining will be made available through retractable walls incorporated into Rojo’s architectural design. |
